Leaner Creamer
Leaner Creamer Nut Pancakes
Ingredients:
- One and one third cups of whole wheat flour ( You may substitute gluten free flour)
- One fourth cup of organic granulated sugar
- One and one third teaspoons of baking powder
- One fourth teaspoon salt
- two eggs separated
- three tablespoons of Leaner Creamer
- One third of a cup of coffee
- One fourth of a cup of coconut oil
- One teaspoon of vanilla extract
- One fourth of a cup of chopped almonds, you will need extra for the topping.
- One fourth of a cup of chopped pecans, you will need extra for the topping.
- One fourth of a cup of chopped hazelnuts, you will need extra for the topping.
- Maple syrup for serving
Directions:
Mix together coffee and leaner creamer, allow to sit so it can hit room temperature.
In medium bowl, mix together flour, sugar, baking powder, and salt.
In another bowl, beat together egg yolks, milk, butter, room temperature coffee mixture, and salt.
Pour egg yolk mixture into dry mixture, make sure they’re no lumps and everything is incorporated. Mix in the array of chopped nuts.
In another separate bowl, mix egg whites until you form soft peaks, we prefer using the medium speed to achieve this.
Fold egg whites into batter, do not over mix!
Heat a skillet, or a griddle to the preferred temperature of 375 degrees F.
Add butter to coat pan, drop pancake batter, one third of a cup of batter at a time.
When the pancakes are golden brown, they are ready to serve. Top with leftover nuts, and maple syrup. We recommend that you heat the maple syrup in the microwave for 10 seconds.
Leaner Creamer Vanilla Chai Pudding
Ingredients:
- Four tablespoons of diluted leaner creamer mixture
- TwoThree tablespoons of maple syrup
- Two tablespoons of pure vanilla extract
- Four teaspoons of chia seeds
- Half of a cup of almonds
- Half of a cup of blueberries
- A mason jar
Directions:
Pour hot water into four tablespoons of leaner creamer, allow to sit and cool at room temperature before use.
Combine ingredients into mason jar, except for the blueberries and almonds. Give the bottle a quick shake, before putting it in the fridge. Leave this in the fridge overnight for best results.
When the previous step has been completed, serve your chia pudding in bowl, and top with blueberries and almonds.
Leaner Creamer Strawberry Smoothie
Ingredients:
- Six Halved Strawberries
- Five Bananas
- Four Tablespoons of diluted room temperature Leaner Creamer
- Half of a cup of Cocoa Nibs
- Half of a cup of Oats
- Blender
Instructions:
Combine hot water and Leaner Creamer, stir until incorported. Let sit out until it reaches room temperature.
Blend together four halved strawberries, four bananas, and leaner creamer mixture. Blend until smooth.
Top with cocoa nibs, oats, and leftover strawberries and banana.

Leaner Creamer Banana Peanut Butter Oat Muffins
Ingredients:
- Two ripe bananas
- Two large eggs
- Two cups of rolled oats
- Three fourths of a cup of fat free, plain greek yogurt
- Half of a cup of light brown sugar
- One third of a cup of peanut butter
- One teaspoon of vanilla extract
- One teaspoon of baking powder
- Half of a teaspoon of baking soda
- One fourth of a teaspoon of salt
- Two tablespoons of Leaner Creamer
- One third of a cup of coffee
- Muffin tin
- Blender/ Food Processor
Directions:
Mix together coffee and leaner creamer, till they’re no lumps left, let it cool to room temperature.
Preheat oven to 400 degrees F.
Spray your muffin tin with cooking spray or you could also line your muffin pin with muffin liners.
First, add all ingredients into blender or food processor. Mix with your choice of machine until the batter is somewhat smooth, where some oatmeal may break down, and some will be intact. This usually takes about a minute.
Pour batter into muffin tin. Fill until each individual mold is about 75% of the way full.
Bake for 1618 minutes, until the tops are golden brown, and the inside is cooked.
Let muffins cool in tin for 1015 minutes, then switch to wire rack and cool until they reach room temperature.

Raise your hand if you're the type that HAS to have that cup of coffee in the morning. I'm the type where you don't speak to me, and I don't speak to you until I have had my coffee.
I also was the type that would drown my coffee in french vanilla creamer (sometimes whip cream on top..shhh) to really hit the comfort spot and make my taste buds happy. However, my waist line wasn't too happy.
