Here’s a great grain-free recipe for pancakes that delivers a healthy punch while leaving you satisfied. They’re packed with protein, incorporate antioxidant- and vitamin-rich matcha powder, and use a touch of Leaner Creamer for extra fluffiness and to keep you full all morning.
Fire up your stove and get cooking!
- ¼ cup Greek yogurt
- ½ banana, well mashed
- ¼ cup vanilla protein powder
- 1 large egg
- ½ tsp baking powder
- 1 tsp matcha powder
- 1 or 2 Tbsp Leaner Creamer
- optional: ¼ cup walnuts
Mix all ingredients but the walnuts together in a large bowl until smooth. Then gently fold in the nuts and pour the batter into your greased griddle or pan. I recommend using coconut oil to grease the pan, but you can also use butter or any non-stick spray. Cook over medium heat until bubbles appear, then flip and cook the other side until the pancake starts to brown.
Top the pancakes with your choice of syrup, honey, sliced bananas or other fruit, and enjoy guilt-free!
