Ingredients:

Crust:

  • 1 ½ cups almond flour
  • 2 tbsp coconut flour
  • 3 tbsp coconut oil, melted
  • 2 tbsp maple syrup or honey
  • 1/8 tsp sea salt

Filling:

  • 1 ½ cups coconut milk (full-fat, canned)
  • 1 cup coconut cream
  • 1/4 cup maple syrup or honey (adjust to taste)
  • 3 tbsp arrowroot powder (instead of cornstarch)
  • 1 tbsp vanilla extract
  • 1/2 cup unsweetened shredded coconut (toasted)

Whipped Topping:

  • 1 can coconut cream (chilled overnight)
  • 1-2 tbsp maple syrup or honey
  • 1 tsp vanilla extract

Instructions:

1. Prepare the Crust:

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, and sea salt. Stir until well combined.
  • Press the mixture evenly into a pie pan, ensuring it covers the bottom and sides.
  • Bake for 10-12 minutes or until golden brown. Let it cool completely.

2. Make the Filling:

  • In a medium saucepan, whisk together coconut milk, coconut cream, maple syrup, and arrowroot powder until smooth.
  • Cook over medium heat, whisking constantly until the mixture thickens and starts to bubble (about 5-7 minutes).
  • Remove from heat and stir in the vanilla extract and toasted shredded coconut.
  • Let the filling cool for a few minutes before pouring it into the cooled pie crust. Spread it evenly.
  • Refrigerate for at least 4 hours or until set.

3. Prepare the Whipped Topping:

  • Scoop the chilled coconut cream from the can (leaving the liquid behind) into a mixing bowl.
  • Beat with a hand mixer until fluffy.
  • Add maple syrup and vanilla extract, continuing to beat until smooth and creamy.
  • Spread the whipped coconut cream over the chilled pie.

4. Garnish and Serve:

  • Sprinkle extra toasted coconut on top for garnish.
