Banana Nut Parfait

This incredible (and customizable) parfait can be served for breakfast or dessert! It will curb your cravings, satisfy your sweet tooth, and give you lots of protein and energy.

 

Here’s what you need:

Hazelnut Leaner Creamer

Walnuts

Bananas

Plain or vanilla Greek yogurt

Uncooked oats

Brown sugar

Coconut oil

Cinnamon


Parfait glass or Mason jar

There are no specific measurements for the ingredients because it all depends on your personal preference -- do you want a lot of bananas, do you hate too much cinnamon, are you running out of walnuts? Totally up to you! So feel free to add as much or as little of each ingredient as you’d like, and you can improvise as you go along too.

In a medium mixing bowl, mix Greek yogurt with a spoonful of Hazelnut Leaner Creamer and a dash of cinnamon to give it a rich, nutty flavor. Once fully mixed, spoon some of the yogurt into the bottom of your glass.

Next, slice up a perfectly ripe banana and spread a few pieces over the yogurt. Then add some walnuts on top too. Repeat with another layer of yogurt, and then another layer of bananas and walnuts.

Now for the crumble! In a small mixing bowl, add uncooked oats, brown sugar, and cinnamon; mix together until ingredients are evenly dispersed. Next, add a bit of coconut oil and use your fingers to combine the ingredients together into a crunchy crumble! Sprinkle the crumble on top of your parfait for a tasty topping.

This recipe is a great starting point, but you can add to it and change it as you’d like! Maybe try it with a layer of almond butter, or add some unsweetened coconut flakes in between each layer as well. If you have some extra time, grill the sliced bananas with a bit of honey (1 minute on each side over medium heat, until brown) for a sweeter treat. Now go nuts and enjoy!
