Vanilla Birthday Cake Cookie
Everyone loves vanilla cookies, they are the perfect addition to your dessert table, so why not add a birthday cake spin to them to make Vanilla Birthday Cake Cookies! Here’s the recipe:
Prep Time 15mins Baking Time 15-18mins Makes 2 dozen
- 1 ¾ cups all-purpose flour
- 1 cup Leaner Creamer Coconut Sugar
- ½ tsp baking powder
- ½ tsp salt
- 4 tbsp Leaner Creamer Birthday Cake
- ½ tsp vanilla extract
- 1 cup coconut oil
- 1 egg
1 Position a rack in the center of the oven and heat the over to 350°F.
2 In a medium bowl, whisk the flour, baking powder, LC Birthday Cake, and salt to blend.
3 Using a mixer, beat the coconut oil and LC Coconut Sugar on medium speed until light and fluffy. Scrape the bowl with a rubber spatula and then beat in the egg and vanilla until thoroughly combined. Scrape the bowl again and then with the mixer on low speed, slowly blend in the four until incorporated.
4 Drop dough by rounded tablespoonfuls into a bowl of LC Coconut Sugar and roll to coat; then set the coated balls about 3” apart on ungreased cookie sheets.
5 Bake until the cookies are golden brown on the edges and slightly soft in the center; 15-18 minutes. Let the cookies cool on the sheet for 1 minute before transferring them to a rack to cool.
6 The cookies can be stored in an airtight container for up to three days!
