Banana Bread

Its Banana Bread season!!! With everyone being stuck at home we could use some easy to bake recipes that we can have fun with. So have fun experimenting with your Banana Bread!! Here’s the recipe:

Prep Time 20mins        Baking Time 1 hour               Makes 12 servings

 Ingredients

Dry

  • 2 cups all-purpose flour
  • ¾ cup Leaner Creamer Coconut Sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • ½ cup coconut oil
  • 2 ⅓ cup mashed bananas (4 bananas)
  • dark chocolate, chocolate-chips (optional)

Instructions

1 Preheat oven to 350°F and coat the pan with coconut oil so that the banana bread comes out smoothly when baked.

2 In a large bowl combine the flour, baking soda, and salt. In a separate bowl cream together the coconut oil and LC Coconut Sugar, then stir in the eggs and mashed bananas until well blended.

3 Combine banana mixture into flour mixture; stir just to moisten. Pour batter into the prepared loaf pan.

4 Bake in preheated oven for 60-65 minutes, until a toothpick inserted into the center of the loaf, comes out clean. Let it cool down for 10 minutes, then serve!
