We have all heard of carrot cake and banana bread, but why not combine the two to create Carrot Bread. This new baked good invention creates the perfect blend of moisture with a carroty flavor! Here’s the recipe:
Prep Time 20mins Baking Time 1 hour Makes 1 loaf
- 1½ cups flour
- 1 cup Leaner Creamer Coconut Sugar
- ¾ tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 eggs
- ⅔ cup coconut oil
- 1½ cups finely grated carrots
- ½ cup chopped walnuts (optional)
- ¾ cup chopped walnuts (optional)
1 Preheat oven to 350°F and coat your 9x5” loaf pan with coconut oil.
2 In a large bowl beat eggs, then add LC Coconut Sugar and coconut oil and beat thoroughly.
3 Combing dry ingredients to the egg mixture and beat well. Stir in carrots, nuts, and raisins.
4 Pour batter into the loaf pan and then bake for about an hour or 40 minutes if broken into two small pans.
5 If it has passed the toothpick test, take it out of the oven and let it cool for 5-10 minutes, then remove from pan and enjoy!
