Pumpkin Power Balls
Hey friends so we’ve had lots of different kinds of to go snacks especially in ball form and honestly they work so well for us. And they’re so easy to share or to eat as a pick me up snack, and since Thanksgiving is coming up real soon it only makes sense to share another recipe! It’s pumpkin inspired and delicious! And the best part about this recipe is that I’m using ingredients that I have used prior so it can be cost effective too.
What you need:
½ Cup Butter
1/3 Cup Soy Milk
½ Cup Pumpkin Puree
1 Cup Maple Syrup or Honey
¼ Teaspoon Cinnamon
¼ Teaspoon Ginger
¾ Cup Chopped Pecans
3 ¾ Cup Rolled Oats
½ Cup Flax Seeds
2 Tablespoons Chia Seeds
2 Tablespoons Leaner Creamer Original
What you need to do:
Melt the butter over medium heat.
Add the milk, pumpkin puree, Leaner Creamer, and maple syrup.
Stir to combine ingredients.
Increase heat until mixture begins to boil while stirring occasionally.
Remove from heat.
Add nuts, oats, flax, cinnamon, and chia seeds into the mixture.
Continue to stir until all ingredients are combined.
Refrigerate for about thirty minutes.
After thirty minutes, remove from the fridge and roll the mixture into balls.
Place the balls onto wax paper.
Refrigerate once again for about an hour before enjoying!
Store in a seal tight container and place in the fridge.
