Non-Dairy Caramel Ice Cream
You scream, I scream, we all scream for ice cream!! No summer is complete without a nice cone of ice cream melting down your hand after a long day at the beach. This treat is sure to fill your summer days with sweetness, but it’s hard for those who are lactose-intolerant to enjoy the cold satisfying dessert. Here at Leaner Creamer, we have a solution!
There are two ways to make homemade ice cream, with a machine or by hand. Using the machine, it cuts down the amount of time spent making the ice cream, however, it is very expensive to buy one. Making it by hand can save you money, but not time. There is about a six-hour difference between the two options, but if you have time to spare and don’t make ice cream often, I would recommend doing it by hand. We’ll detail both options within this recipe.
Option 1: Ice Cream Machine

Ingredients
- 2 cans of full-fat coconut milk
- ¾ cup of Caramel Leaner Creamer
- 1 tablespoon of coconut syrup
- 4 Eggs
- ½ teaspoon of salt
Instructions
1. Combine all of the ingredients above, using either a blender or mixing it by hand. Using a blender may be more efficient, as it has an easier time cutting at the chunks of coconut milk.
2. Once these ingredients are combined into a smooth mixture, pour it into your ice cream machine and follow all the instructions listed on your machine.
3. And boom! Enjoy your ice cream now or put it in the freezer to enjoy later.
Option 2: Handmade Ice Cream

Ingredients
- 2 cans of full-fat coconut milk
- 14 oz of dairy-free sweetened condensed milk (you can find an easy recipe online!)
- ½ teaspoon of vanilla extract
- ¾ cup of Caramel Leaner Creamer
- 1 tablespoon of coconut syrup
Instructions
1. First, pour the cans of coconut mix into an electric mixer and then whip until it forms stiff peaks.
2. Next, add the dairy-free sweet condensed milk, vanilla extract, and Caramel Leaner Creamer and mix well on a low speed.
3. Once the mixture is smooth, pour it into a container, cover with plastic wrap, and place in your freezer for at least six hours.
4. Once the ice cream is firm, serve it to friends and family or just keep it all for yourself!
