LeanerMe Carrot Soup!
Hey friends, I hope you’re doing swell! Well I don’t know where you live but it’s freezing here in California. I know, I know. I shouldn’t be complaining because we get the sun and we're right next to the beach so it can’t be that cold but IT IS. AND I AM FREEZING MY BUTT OFF. AND IT’S SO WINDY. So if any of you have any tips to keep warm, or any recipes that help you keep warm please send them my way!
So I think it’s the perfect time to create a soup for you to enjoy! I hope you like carrot soup because that’s the recipe I’m offering you.
What you need:
1 Yellow Onion, Chopped
7 Carrots, Peeled & Chopped
1 Clove of Garlic, Minced
½ Teaspoon Cumin Seeds (Optional)
¼ Teaspoon Chili Powder
Pinch of Salt and Pepper
3 Teaspoons of Leaner Creamer Original
4 1/3 Cup Water
Olive Oil
What you need to do:
In a low-medium flame, heat some olive oil in a pot and add 2 of the onions and the clove of garlic for about two to three minutes.
Add the carrots and let it heat up for about five minutes to let is soften. Add the water, vegetable stock, and Leaner Creamer bring to a boil.
Make sure to let it simmer for about 20 to 25 minutes.
Using a blender to mix the soup.
Pour into some bowls, and enjoy! Add some pepper and salt to taste.
Optional:
Using a pan, sauté some of the onion in some olive oil until the onions turn golden brown.
OH AND BE CAREFUL WHEN POUR HOT LIQUIDS INTO THE BLENDER!!!!

*Leaner Creamer, Water, Spices & Vegetable Stock not pictured
*Low to Medium Flame
*Add the Chili Pepper -I forgot to picture it, sorry!
*Because soup is hot, only fill 1/3 of the blender, and make sure to vent the lid. Place a clean towel on top of blender, and blend. This will be done in multiple batches!

By the way this soup makes four servings- actually more I guess it makes about 2 quarts of soup!
