LeanerMe: Butternut Squash Soup
Hey friends, hope you’re doing well! And again with this kind of weather I think a soup recipe is called for! And this time it’s a butternut squash soup that’s creamy and delicious!! It’s perfect for the weather and to share at the end of the day or heck even for lunch.
What you need:
1 Onions, Chopped
2 Garlic Cloves, Chopped
1 Butternut Squash, Chopped
1 Tablespoon Coconut Oil
2 Tablespoons Curry Powder
1 Tablespoon Cumin
1 Tablespoon Turmeric (optional)
1 Teaspoon Chili Powder
1 Can Coconut Milk
2 Portions Vegetable Stock
2 Cups Water
3 Teaspoons Leaner Creamer
What you need to do:
Heat the coconut oil in a pot and add the two onions and the garlic cloves for about two to three minutes.
Add the butternut squash.
Add the coconut milk, water, vegetable stock and Leaner Creamer (it will begin to boil as you continue to add ingredients.)
Add all the spices (curry powder, cumin, turmeric, and chili powder) cook for about 5 minutes.
Officially bring to a boil and then let it simmer for about 25 minutes.
Use a blender to mix the soup!

Hi Rebecca! I ran into the same problem when attempting this recipe, sorry I forgot to mention it. I used 2 cups of vegetable stock, but you may wanna play around with it because sometime after I think I added a splash of more vegetable stock. Enjoy!!

How much is “2 portions” of vegetable stock? The recipe doesn’t specify and the entire internet doesn’t seem to have an answer to this question either. Please clarify. Thank you!
