Do you have a love for all things red velvet? These thumbprint cookies are red velvet goodness with a candy cane hug in the center! Here’s the recipe:
Prep Time 20mins Cooking Time. 12mins Makes 3 dozen
- 1 - ½ cups unbleached flour
- 3 teaspoons Leaner Creamer Peppermint Mocha
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup coconut oil
- 1 cup Leaner Creamer Coconut Sugar
- 1 egg
- 1 tablespoon liquid red food coloring
- ½ teaspoon vanilla extract
- 1 teaspoon white vinegar
- Candy Cane Hershey’s Kisses
1 Preheat oven to 325°F. Line cookie sheets with parchment paper.
2 In a small bowl, whisk flour, LC Peppermint Mocha, cocoa, baking soda, and salt. Set aside.
3 In a stand mixer, combine oil and LC Coconut Sugar and mix until smooth. Add eggs and mix until creamy. Mix in red food coloring, vanilla, and vinegar. Add flour mixture until completely combined.
4 Using a small cookie scoop or your hands, scoop dough into about 1” balls. Roll in your hands and place on cookie sheet; 12 cookies per sheet.
5 Bake for about 12 minutes in a preheated oven, or until edges are set. Remove from oven and press Hershey’s Kiss candy into the middle of each cookie. Let rest for one minute and then gently tap the cookie sheet on counter to make the Kiss drop into the thumbprint. Alternately, if you’d like the Kiss intact, don’t tap the cookie sheet. They both look yummy! Move to a cooling rack and enjoy!
