Baked Pumpkin Donut

There are so many cool pumpkin recipes out there, which is what fall is all about!! One of them is this Pumpkin Donut that is perfect with a morning cup of coffee or even an afternoon cup of tea. You will be tasting fall in every bite and they’re lightly sweetened, name a better combo! Here’s the recipe:

 

Prep Time 10mins          Total Time 45mins     Makes 24 donuts

 

Ingredients

● ¼ cup coconut oil

● 3 eggs

● ⅓ cup buttermilk

● ¾ cup Coconut Sugar

● ½ cup brown sugar

● 1 ½ cup pumpkin puree

● 2 tsp Leaner Creamer Pumpkin Spice Creamer

● ½ tsp baking powder

● ½ tsp baking soda

● ¾ cup coconut flour

Instructions

1 Preheat the oven to 350˚F and coat a donut pan with non-stick spray.

2 In a large bowl, mix oil and sugar and then add buttermilk; make sure to mix well.

3 In the same bowl add in the eggs one by one and mix well after adding each one. Then add the pumpkin puree and mix well.

4 Add in all the dry ingredients and mix using a spatula until combined, but be sure to not over mix!

5 Fill the donut molds to two thirds and bake in the oven for 15 minutes or until a toothpick inserted in the donut comes out clean. Let donuts cool for 5 minutes then take them out.
