Pumpkin Cheesecake

It’s CHEESECAKE TIME!! Everyone loves a tasty cheesecake, so how about a Pumpkin Cheesecake recipe that can be made at home with the family? It is a great way to spend time with the family and enjoy a delicious cheesecake made through hard work and effort. Here’s the recipe:

Ingredients

Crust

● 1 ¾ cups graham cracker crumbs

● 3 tablespoons Coconut Sugar

● ½ teaspoon ground cinnamon

● 6-7 tablespoons coconut oil

Filling

● 3 (8oz.) packages cream cheese, at room temperature

● 1 (15oz.) can pumpkin puree

● 3 eggs plus 1 egg yolk

● ¼ cup sour cream

● 1 ½ cups Coconut Sugar

● ½ teaspoon ground cinnamon

● ⅛ teaspoon fresh ground nutmeg

● ⅛ teaspoon ground cloves

● 1-2 tablespoons coconut flour

● 1 teaspoon vanilla extract

Instructions

1 Preheat oven to 350°F.

2 Crust: In a medium bowl, combine crumbs, sugar, and cinnamon, then slowly add the oil. Press down flat into a 9-inch springform pan then set aside.

3 Filling: Beat cream cheese until smooth and then add the pumpkin puree, eggs, egg yolk, sour cream, sugar, and the spices. Add the flour and vanilla, then beat together until well combined.

4 Pour into crust and spread out evenly, then place it in the oven for an hour. Remove from the oven and let sit for 15 minutes, then cover it with a plastic wrap and refrigerate for 4 hours.
