Chocolate Chip Zucchini Bread!
Hey, so I know for the past recipes I’ve given you something that involves chocolate but this time around I have decided to give you something a bit different. Not too different because it still involves chocolate but it involves an ingredient that you normally wouldn’t picture with chocolate and that’s zucchini! Yup, who would have guessed that zucchini and chocolate go together like peanut butter and jelly or like Leaner Creamer and coffee!
What you need:
1 ½ cups almond flour (white whole wheat flour will do just fine)
1 Teaspoon Baking Powder
½ Teaspoon Baking Soda
½ Cup Honey
2 Teaspoons Vanilla Extract
½ Teaspoon of Salt
½ Teaspoon of Ground Nutmeg
2 Teaspoon Ground Cinnamon
½ Cup Applesauce (Preferably unsweetened)
1/3 Cup Coconut Oil (melted please)
1 Egg
2 Tablespoons Leaner Creamer Original
1 ½ Zucchinis already grated
¾ Cup Dark Chocolate
1/3 Cup Chopped Walnuts
Don’t let the long list of ingredients intimidate you. It’s a fairly easy recipe that you’ll wow your guests with.
What you need to do:
1- Preheat your oven to 350 degrees.
2- Grease the bottom and sides of an 8x8 loaf pan preferably by using coconut oil but if you don’t have a lot of that go ahead and grease the pan with what you got.
3- Lightly dust the pan with some flour and shake the excess flour out.
4- Whisk the flour, baking powder, baking soda, nutmeg, cinnamon and leaner creamer in a bowl.
5- In a separate larger bowl which the honey, applesauce, melted coconut oil, egg and vanilla extract until batter is smooth.
6- Add the dry mix (step 4 bowl) into the larger bowl (step 5 bowl) until everything looks well combined and smooth.
7- Slowly add the bigger pieces- the zucchini, the chocolate chips, and the walnuts. (You should probably fold them little by little.
8- Once everything is mixed well, add the batter onto the already prepared pan.
9- Bake for at least 45 minutes or until batter is golden brown. Best way to figure it out is by inserting a toothpick in the center and if it comes out clean it’s ready.
10- Serve and enjoy!
