I'm a chocolate freak. Something about chocolate and nut butter just tastes DIVINE. When I made these bars, which, mind you took no more than 20 minutes to whip up, I was amazed with how delicious, healthy, and easy they were to make! Not only that, but these bars are no-bake, and can be gluten free and vegan if desired. They travel well, and can easily fit inside a backpack or purse for a snack throughout the day. This recipe makes between 12 and 16 bars, and I always can get at least 2 weeks worth of snacks before having to make another batch, so a little effort goes a long way. Here's the recipe:
Ingredients:
1½ cups rolled oats
¼ cup flax seed meal
⅛ cup chia seeds
¼ cup sunflower seeds
¼ cup sesame seeds
⅓ cup pumpkin seeds
½ cup cashews
½ cup almonds
½ cup honey
2 tablespoons Original Leaner Creamer
2 tablespoons cinnamon
1 cup almond butter
½ cup chocolate chips
½ cup dried cranberries
Instructions:
1. Line a 8 x 8 baking dish with parchment paper.
2. Combine dry ingredients in a large mixing bowl. Then, add wet ingredients. Combine thoroughly.
3. Pour mixture into baking dish and spread until it evenly coats the dish.
4. Put dish in refrigerator overnight.
5. In the morning, cut evenly into bars. Wrap in saran wrap and store in the refrigerator.
