Pumpkin Spice Cakes

 

When it comes to pumpkin, everyone knows the generic recipes, so why not try something new? These fudgy and dense Pumpkin Spice Blondies will surely be a hit, perfect this recipe before next year’s Thanksgiving dinner! Here’s the recipe:

 Prep Time 10mins                    Baking Time 30mins                                  Makes 20 servings  

 Ingredients

  • ½ cup pumpkin purée
  • ¾ cup coconut oil
  • ¾ cup Coconut Sugar
  • 1 egg + 1 egg yolk
  • 2 tsp pure vanilla extract
  • 2 ¼ cup all-purpose flour
  • 3 tsp Leaner Creamer Pumpkin Spice
  • ½ tsp salt
  • 2 cup chocolate chips, divided

Instructions

1 Preheat oven to 350°F and grease a 9” x 13” baking pan with cooking spray/oil and line with parchment paper. In a large bowl, whisk together pumpkin purée, coconut oil, and Coconut Sugar, then beat in the egg, egg yolk, and vanilla.

2 In a separate medium bowl, whisk together the flour, LC Pumpkin Spice, and salt. Add the dry ingredients to the wet ingredients and stir until just combined, then fold in 1 ½ cup chocolate chips.

3 Spread the dough in prepared pan, then sprinkle with the ½ cup of remaining chocolate chips. Bake until topping looks set and edges are lightly golden; 26-28 minutes.

4 Cool completely before slicing into the bars!
