Otherwise known as "Mexican Wedding Cookies", these simple no-bake gluten free treats are PERFECT in a pinch! This recipe was inspired by the lovely Detoxinista - depending on the size of the finished product, this recipe can make anywhere from 6-12 snowballs.
- 1 cup pecan halves
- 1/2 cup shredded unsweetened coconut
- 1 cup soft Medjool dates, pitted
- 1 tablespoon coconut oil
- 1/4 cup Leaner Creamer
- 1/2 teaspoon sea salt
- 1/2 teaspoon vanilla extract
- 1/2 cup arrowroot
In a blender or food processor, blend pecans and dates together.
Once thoroughly pulverized, add in remainder of ingredients and blend.
Mixture should look crumbly but stick together when squeezed by hand.
Roll into balls of your desired size, then roll or dust with arrowroot
Garnish with slices of unsweetened coconut.
