An easy-bake Chocolate Lava Cake recipe without all the messiness of baking!!
Here’s the recipe:
Prep Time 10mins Baking Time 12mins Makes 4 servings
- 6 tbsp all-purpose flour or gluten-free baking blend
- 2 egg yolks
- 2 whole eggs
- 1 cup powdered Coconut Sugar (blend to have powdered form)
- 4 squares semi-sweet baking chocolate (4oz.)
- ½ cup coconut oil
1 Preheat the oven to 425°F and grease 4 six-ounce ramekins or oven-safe bowls with coconut oil and set aside.
2 In a microwave-safe bowl add the coconut oil and chocolate. Microwave on high until the chocolate starts to soften; about a minute.
3 Mix the chocolate and coconut oil together until no lumps remain. If you need to microwave it a bit longer you can.
4 Add the powdered Coconut Sugar, eggs, egg yolks, and the flour then stir until combined into a thick batter.
5 Place the batter in the prepared ramekins and place on a baking sheet to easily move them in and out to the oven. Then place them into the oven to bake for 12-13 minutes until the edges are set and the center is soft.
6 Let the cakes rest for 2 minutes and then transfer to a serving plate. Serve right away with berries and ice cream of your choosing.
