Prep Time 1 hour. Baking Time 1 hour Makes 12 servings
- ½ cup coconut oil
- 1 cup Coconut Sugar
- 1 tsp baking powder
- 1 cup almond milk
- 2 cup cherries
- ¾ Coconut Sugar
- 1 tbsp all-purpose flour
1 Preheat the oven to 350°F. Grease and flour a 9” x 13” baking dish with coconut oil.
2 In a medium bowl, stir together 1 cup of flour, 1 cup of LC Coconut Sugar, and baking powder. Mix in the milk until well blended, then pour the batter into the pan. Do not stir!
3 In a medium bowl, place the cherries and toss with the ¾ cup of LC Coconut Sugar and 1 tablespoon of flour. Distribute the cherry mixture evenly over the batter. Do not stir!
4 Bake for 50 to 60 minutes in the preheated oven, until golden brown. A toothpick inserted into the cobbler should come out clean. Enjoy with a scoop of ice cream!
