Take a break from those boring parfait recipes and check out this Banana Cream Pie Parfait! A super easy dessert with from-scratch pudding layered between coconut whip cream and a chocolate garnish. Here’s the recipe:
Prep Time 15mins Cooling Time 2hrs. Makes 6 servings
- 3 tbsp all-purpose flour
- ½ cup Coconut Sugar
- ¼ tsp salt
- 1 cup almond milk
- 1 tsp banana extract
- 2 eggs
- 1 tbsp coconut oil
- 2 tsp vanilla extract
- 2 oz. non-dairy cream cheese (room temperature)
- 1 ½ cups coconut whipped cream
- grated chocolate
- sliced bananas
1 In a medium saucepan whisk together the all-purpose flour, LC Coconut Sugar, and salt.
2 Gradually whisk in the milk, then add the banana extract, eggs, and coconut oil.
3 Heat over medium heat, whisking constantly until ingredients begin to boil. Reduce to low and stir until thick.
4 Remove from heat and add vanilla extract.
5 In a separate bowl beat cream cheese until light and fluffy then beat in about ¼ cup of filling to cream cheese mix until well mixed. Fold in remaining filling.
6 Cover with plastic wrap placing the wrap directly onto the surface of the filling. Refrigerate for a couple of hours.
Assembly: Add 2-3 tbsp of filling to the bottom of a parfait glass and then top with coconut whip cream; repeat. Top with fresh banana slices and grated chocolate over the top. Refrigerate until needed and then devour!
