LeanerMe: Raspberry Coconut Parfait
Hey friends so I know lately we’ve been having lots of sugary foods because of the holidays, and I’m not even mad about it! But I need a break, I need some fruit parfait that is has some natural sugar not that processed sugar junk that I’ve been eating lately!
What you need:
1 ½ Cups Fresh Raspberries
½ Cup Fresh Blackberries
1 Can Full Fat Coconut Milk (Refrigerated Overnight)
½ Teaspoon Vanilla Extract
1 Teaspoon Leaner Creamer Original
1 Tablespoon Raw Honey
What you need to do:
Open the can of overnight refrigerated coconut milk and pour the liquid out.
Scoop the coconut milk into a large bowl and whip the milk to a whipped cream consistency.
Whip in Leaner Creamer, Vanilla, and Honey.
In a separate bowl, mash one cup of raspberries. Fold half of the whipped coconut milk into the mashed raspberries.
Layer the mashed raspberry mixture into a glass, then layer on the raspberries and black berries.
Use the remaining whipped coconut milk and layer it onto the glasses.
You can garnish with the remaining berries and enjoy immediately!
